Quantity Unit Ingredient
- 20 grams soba noodles
- 1 tablespoon spring onion
- 100 grams baby corn
- 100 grams baby carrots
- 1 small zucchini
- 1 tablespoon rice wine vinegar (mirin)
- 1 tablespoon light soy sauce
- 1 teaspoon red chilli or red pepper flakes (can use Asian Chili Sauce)
Bring water to the boil and place soba noodles in. Cook to directions (4-5 minutes usually) place into cold water immediately. Slice zucchini into small strips and steam with corn and carrots. Combine mirin, soy sauce and chili. Arrange the soba noodles in a pile; in a seperate pile the vegies and in the middle the sauce seperately. Dunk cold noodles in sauce as you eat them, same with vegies. Can use other veggies (I like broccoli and green beans as well).
